OH HI THERE! Church of Jesus Christ Latter-Day Saint (LDS, or Mormon) here. Liturgy, as for you, Not A Thing! We do have a choir, but it sings, oh, once a month. But like your denomination, LDS are really into singing in general (it's no accident that the Mormon Tabernacle Choir exists), and in particular my own ward ("congregation") is chock-full of good singers, many of whom like to do the harmony, so yeah! I get you! Lots of fun!
(When I say I lead the music, I don't mean choir, I'm not the choir director -- for some reason it's an LDS Thing, something I haven't really seen at any other church, that someone always has to be waving one's hands at the congregation to help them keep the beat while singing.)
Not the choir director, but I would be SO SURPRISED if they didn't call me to be the choir director in my ward sometime during my lifetime, and at that point, although there is no way in the world I could get away with Latin I WILL SO BE DOING SOME EASY POLYPHONY IN ENGLISH... (Since our singing traditions, Mormon Tabernacle Choir aside, don't generally involve polyphony, it's an uphill battle to do it, but I AM WILLING TO FIGHT THIS FIGHT. :) )
