So, my theory of why Dumbledore trusts Snape so much is because they made that unbreakable vow thing (can't remember what it is called) that Snape makes at the beginning of Book 6.
I think this is good because why else would you introduce it right at the beginning of Book 6? On the other hand, it would tend to undermine the character trait of "Dumbledore has absolute faith in people" so the theory isn't perfect.
